For a sunnier morning

There is something that can make even the greyest morning a bit sunnier, metaphorically speaking (even though I wish I’d actually found something that could change the weather). That is having a delicious and healthy breakfast waiting for you in the fridge, ready to kick-start your day in the best possible way. It makes life so much easier, and gives you time to take it easy, or maybe even sleep a few extra minutes. Chia pudding is one such great breakfast that can be made ahead of time to be enjoyed the next morning. Here is a new favorite version of mine, with banana and cinnamon.

The base of this recipe is the chia seeds, liquid and oats. Start with this and you can flavor it with pretty much anything you want. Oats are not essential, but I think they make the pudding a bit creamier. I usually just use water, mostly because I’m a bit cheap and think it works out great, but if you want to make it a bit more luxurious and creamy make it with your favorite vegan milk. I can promise you it’ll be good anyhow, but this might just make it even better.


Enough to make 1 person’s morning a bit sunnier
2 tbsp. chia seeds
1 tbsp. rolled oats
1 ¾ dl water or vegan milk
½-1 tsp. cinnamon (depending on how much you love cinnamon)
1 banana
1 tbsp. sunflower seeds
2 chopped dates

For serving: Roasted coconut and vegan milk

Mash half the banana, save the other half for serving the following morning. Mix the mashed banana with the rest of the ingredients. Let sit for about 10 minutes, and then give it a stir. Cover and keep in the fridge until the following morning. Slice the second half of the banana over the top, sprinkle with some cinnamon and roasted coconut and serve with some vegan milk! Easy as can be!
